Swiss Chard Borani - Yogurt Dip with Swiss Chard

Swiss Chard Borani is a yoghurt dip with Swiss chard, garlic and walnuts. Borani refers to delicious Persian yogurt dips, that make great snacks, sides or nibbles for parties! There are lots of versions of Borani! A popular one is Borani-ye Esfenaj - yoghurt spinach dip. This time, I thought I’d switch the recipe up by using Swiss chard instead.

I saw this beautiful Swiss chard at my local fruit and veggie shop and just had to create something with it. It is full of nutrients, such as magnesium, iron, potassium, vitamins A, C, K, antioxidants and more. So I wanted to make a dish that preserves those precious nutrients. In this recipe, we steam the chard for only 3 minutes and that’s it. You can make this delicious dip in 10 minutes of active prep time (the rest is just cooling time). I hope you enjoy it!

Swiss Chard Borani - Swiss Chard Recipe - Dip

Ingredients (for 500g/2 cups of Borani)

500g Greek-style yogurt

200g Swiss chard

2 cloves garlic

5 walnuts (10 halves)

1/4 tsp black pepper

1/4 tsp salt

Method

Prep the Swiss chard

Wash the Swiss chard and peel some skin from different coloured stalks, using a paring knife or potato peeler. We’ll use them later to garnish the Borani. Also, cut about 5cm / 2 inches of each stalk and finely chop them into tiny cubes. We’ll use these as garnish as well and set them aside with the shavings, for now.

Now add the remaining chard to a pot, together with 4 tbsp water. You can cut them in half if they don’t fit in the pot. Put on the lid and let the chard steam over medium heat for about 3 minutes. Then remove it from the pot and set it aside to cool down.

Prep the other ingredients

Peel and finely chop the garlic. 

Crush the walnuts into small pieces, using pestle and mortar.

Combine the ingredients

Once the chard has cooled down, roughly chop it. Combine it with the yoghurt and add the garlic and walnuts to it. Season with black pepper and salt and give it a good stir. Transfer the borani to a dish for serving and garnish it with the mini chard cubes and shavings.

Serve it with your favourite crackers. Enjoy!
