Sosis Bandari - Spicy Sausage Sandwich

Sosis Bandari is a tasty Persian sandwich filling from southern Iran. It’s one of the few Persian dishes that is quite spicy. Of course, you can adjust the level of spiciness to your personal liking. But if you ask me, I like my Sosis Bandari with a kick!

In Iran, you can find Sosis Bandari in sandwich shops. You can use it as a sandwich filling or serve it with sliced baguette or flatbread. It makes the perfect party food!

Authentic Sosis Bandari doesn’t have potatoes in it but since I know some people like to add them, I included them in this recipe as an optional step.

Sosis Bandari Recipe - Sausage Sandwich Recipe

Ingredients (serving 4)

400g / 14oz beef sausage or vegan sausage (preferably Frankfurter or Wiener style)

200g / 7oz potatoes (optional)

4 medium onions 

8 cloves garlic

1 chilli

4 tbsp tomato paste

6 tbsp vegetable oil (this is enough oil if you’re making Sosis Bandari without potatoes)

1 tsp turmeric

1/2 tsp black pepper

Chilli powder to taste (optional)

For the sandwich:

Bread of choice to serve (eg baguette, flatbread, gluten-free, wholegrain, …)

Salad leaves of choice

Finely chopped fresh parsley

Pickled cucumbers or gherkins

Mayonnaise

Preparation

Peel the onions and finely slice them.

Skin off and finely chop the garlic.

Remove the calyx and quarter the chilli lengthwise. Remove the seeds and the membrane (If you want to reduce the heat). Finely chop the chilli. Remember to wash your hands, knife and chopping board after that.

Slice the sausages about 5mm/0.2” thick.

Method 

If you don’t want to add potatoes you can skip this step. Wash the potatoes and cut them into small 1cm / 0.4” dice. I usually don’t peel the potatoes, but you can do so if you prefer. Fry the little potato cubes in the hot vegetable oil until golden brown. Make sure the temperature isn’t too high so that they don’t burn before they are fully cooked. Remove them from the pan and put them on a paper towel, so any excess oil gets absorbed. 

Caramelise the onions in 4 tbsp oil until golden. Remove them from the pan and set them aside.

Fry the sliced sausages in 2 tbsp oil from both sides until nice and brown. Remove them from the pan and set them aside as well.

Add 4 tbsp tomato paste, followed by finely chopped garlic, finely chopped chilli, turmeric, black pepper and chilli powder. Combine well.

Add 1/2 cup/120ml water and let everything simmer over medium heat for about 5 min.

Transfer the caramelised onions and sausages back to the pan and stir them in. 

Add salt to taste.

Serve the Sosis Bandari with bread or fill sandwich baguettes with it. Add some mayonnaise, finely chopped parsley, lettuce, herbs and khiaar shoor (salty pickled cucumbers) if you like.
