Sandevich-e Makaroni

One of the nostalgic sandwiches of our childhood in Iran is Sandvich Makaroni. Most people who grew up in Iran will have a memory around enjoying this sandwich filled with Persian-style macaroni.

You can prepare this sandwich for picnics, gatherings, or parties. I’m sure your children would love it. Make the Iranian Macaroni first and then turn them into a sandwich. It’s also a great way to use leftover Makaroni.

Ingredients (serving 4)

Enough cooked Iranian Makaroni to fill 4 sandwich breads

Bread of choice to serve (eg ciabatta, baguette, flatbread, gluten-free, wholegrain, …) I use ciabatta bread as it tastes very similar to Noon Bolki

4 tomatoes

2 tbsp butter

Salty pickled cucumbers (khiaar shoor) or gherkins

Lettuce, chopped parsley, or salad leaves of choice

Method for making Persian Macaroni Sandwich

Place a frying pan over medium heat and add the butter.

Once the butter is melted you can transfer the Makaroni into the pan.

Fry for about 5 minutes until a nice golden crust appears on them

Serve your delicious Sandvich Makaroni

Fill your sandwich bread with fried macaroni. Add some tomatoes, mayonnaise, finely chopped parsley, lettuce, herbs and khiaar shoor (salty pickled cucumbers) if you like. Enjoy!
