Dam Pokhtak Recipe - Split Fava (Broad) Bean Rice
Dam Pokhtak is an easy, delicious Persian rice dish with split fava (broad) beans. It’s also called Dami Baghali. This dish is so underrated! You never hear anyone say ‘Dam Pokhtak is my favourite Persian dish!’, but as soon as someone mentions it, everyone goes ‘Oh I love it!’.
At dinner parties of course every Iranian wants to show off their cooking skills and use expensive ingredients, so no one prepares Dam Pokhtak for their guests. But if they’d ask their guests ‘What would you like me to cook?’, I bet many of them would ask for Dam Pokhtak.
It tastes delicious on its own, but you can make it extra scrumptious by serving it with Nimroo (fried eggs).

Method for cooking Dam Pokhtak
Soak the dried fava (broad) beans
Soak the dried fava (broad) beans in water for 5 hours before starting to cook. After 2 to 3 hours change the water.
Prep the onion
Peel the onion and finely chop it.
Gently sauté the onions in 2 tbsp vegetable oil over medium heat for about 10 minutes, in the pot you usually use for rice.
Get the Dam Pokhtak cooking
Drain the water from the split fava beans. Add the beans to the pot with the onions. Season with turmeric and black pepper and sauté everything together for about a minute.
Then add 4.5 cups / just over 1 litre cold water to the pot and give it a stir. Wash the rice and add it to the pot. Season with salt now. I added 1 tsp but you can of course adjust the amount to your taste.
Increase the temperature to bring the water to a simmer. Let it simmer until the water has reduced significantly. You will see little holes forming in the rice when the water has evaporated enough.
Now add the butter and stir it in. Line the lid with a clean kitchen towel and close it firmly. Reduce the temperature to low and let the rice and split fava beans steam for 45 to .. minutes, depending on how crispy you like the tahdig.
Serve your delicious Dam Pokhtak
Once the Dam Pokhtak is cooked, flip the pot, replace the lid with a plate and protect your hands with oven gloves. Remove the tahdig and fluff up the rice to serve. Serve it with fried eggs, as mentioned above, Salad Shirazi, mixed herbs, pickles or plain yoghurt. Enjoy your delicious Dam Pokhtak!
